DIY: Cannabis Infused Sweet Potato Pancakes

So you’re high.

Now you’re looking for something fucking delicious and easy to make. Well you’re in luck because I, Jamela Zarha, have a recipe for cannabis infused Sweet Potato Pancakes that is so good, it will make you cancel the rest of your plans for the day just so you can really take in the greatness you just consumed.

Ingredients:

  • 1/2 Mashed Sweet Potato

  • 3/4 Cup of Unbleached All-Purpose Flour

  • 2 Tsp Baking Powder

  • 3 Tsp Coconut Suger or Raw Cane Sugar

  • 2 Tbs Cannabis Butter

  • 1/2 Cup of Unsweetened Almond Milk

  • 1/2 Tbs of Vanilla

  • 2 Tsp of Apple Cider Vinegar

  • 1 Large Egg

 

Pancakes:

Cut Sweet Potato into quarters and boil in hot water until soft enough to penetrate with a fork.

 

Mix all dry ingredients in a large bowl. Beat egg and combine all wet ingredients with dry ingredients.

Mash 1/2 cup of warm sweet boiled potato with 2 Tbs of canna-butter.

 

Mix sweet potato mixture with everything else. Mix well and let rise for 1-2 minutes.

Heat pan or griddle with light oil.

Pour about a half cup of batter into hot pan.

Flip as necessary for golden brown pancakes.

If you want to try this before a workout, add some protein! I highly recommend adding a teaspoon of Hemp Protein to your batter.
